Valentine Truffles

12 ounces of semi sweet chocolate   

1/4 cup whipping cream

1 tablespoon whipping cream

powdered sugar

red sugar

In a heavy sauce pan, combine chocolate (break blocks) and whipping cream. Cook over low heat, stirring mixture until chocolate is completely melted. Remove from heat. Put mixture into mixing bowl and refrigerate until cool to the touch, but not yet hardened. Add one tablespoon of whipping cream and beat with electric mixer for 3 or 4 minutes. Refrigerate until mixture can be rolled into balls, approximately one inch in diameter. Roll into powdered sugar, then roll into decorative red sugar.
